Watermelon will be in season very soon and this versatile fruit is perfect for making summer sushi. This red fruit is 92% water and packed with lycopene and antioxidants that hydrate the body and can reduce risk of cancer and diabetes. Watermelon Tuna Ingredients:
1 cup peeled and cubed ripe watermelon
2 tablespoons sesame oil
1/4 cup coconut liquid aminos
1/2 teaspoon finely chopped jalapeno
pinch of garlic salt
1/2 teaspoon sesame seeds
Sushi Ingredients:
1 cup rice
1 tsp cream cheese
1 large carrot
1 cucumber
1 red bell pepper
1/2- whole avocado
1 tbsp coconut aminos
1 tbsp pickled ginger
1 tsp wasabi
3 nori wraps

1/4 cup rice vinegar
2 tsp stevia or sugar
How to make the Watermelon Tuna:
Begin by peeling and cutting organic, ripe watermelon. Place 1 cup of watermelon in Stasher bag. Add the oil, aminos, jalapeno and garlic salt. Place in refrigerator and marinate watermelon cubes for 6 hrs. Remove from fridge and place watermelon on baking sheet. Save the remainder of the liquid for later. Bake watermelon for one hour at 350 degrees. Remove from oven, pour liquid on top, sprinkle with sesame seeds and allow to cool.
How to make the Sushi:
Begin by cooking the rice- add 1 1/2 cup of water to 1 cup arborio rice. Bring to a boil then reduce heat to low and cover with lid. Once the water is absorbed add the stevia and rice vinegar. Stir and let cool. Cut veggies and avocado into thin strips. Mash the avocado as if making guacamole and set aside. Layer each nori wrap with about 1/4 to 1/2 cup of rice. Smooth the rice evenly with wooden spoon leaving a boarder of 1/4 inch around the entire wrap. Begin layering the veggies and avocado mash closet to you on the rice. Fold the wrap delicately and tightly. Set aside and repeat until all three rolls are completed. With a sharp serrated knife cut the rolls into approximately 1 inch thick rounds. (Add the ginger, coconut liquid aminos, and wasabi to a serving dish with the rolls. ) Enjoy!
