Well my sweet tooth reared its ugly head this week. Even after coming off of a long holiday season filled with decadent treats. I promised myself I would detox and start fresh for the new year. In order to satisfy my craving, I needed to create a recipe that was also not completely unhealthy.
A gluten free, vegan, no bake dark chocolate date bar! Delicious, check. Sweet, check. Chewy, check. Dates are healthy right? They are high in fiber and filled with potassium. Dark chocolate contains antioxidants. A perfect treat for the weekend in moderation. Try making this recipe and let me know what you think!
What you’ll need:
2 cups pitted dates
1/2 cup natural crunch sunbutter
1/2 shredded coconut
1/2 cup enjoy life dark chocolate chips
1/4 cup dried cherries
Here’s how:
Chop dates, sunbutter and coconut in food processor.
Evenly spread the mixture over a small brownie or pie pan lined with parchment paper.
Melt the dark chocolate chips in a microwave safe bowl in the microwave. Begin with one minute and continue to stir. Place back in microwave for 30 second intervals and stir to avoid burning the chocolate.
Pour the chocolate over the date mixture and spread evenly with a spatula. Sprinkle the dried cherries on top.
Cover the date bars with tea towel and place in freezer for one hour. Remove, cut and leave in refrigerator until you need another fix.
