Have you ever just needed something warm in your belly? I know I can only take so many salads and smoothies. On those days, I need to find a creative home cooked meal, loaded with nutritional value and tons of flavor. This cauliflower and quinoa dish is the perfect option!
Did you know that cauliflower is packed with vitamins, omega 3 and protein? It also contains Sulforaphane, a powerful cancer fighting chemical. These benefits are on top of the fact that cauliflower is delicious and versatile. This super cruciferous vegetable can be cook a number of ways and is one of my food staples. I try to incorporate it in my diet a couple of times of week and therefore always looking for new ways to cook. Voila, a new recipe is born.
Cauliflower and Quinoa
What you’ll need:
1 cup quinoa
1 head of cauliflower
1 cup of coconut milk
1 teaspoon fresh grated ginger
1 teaspoon fresh grated turmeric
1/2 cup chopped basil
2 teaspoons apple cider vinegar
1 tablespoon olive oil
3 cloves of garlic
salt and pepper to taste
Here’s how:
Grate the ginger and turmeric and set aside. Make sure to wear gloves to avoid staining your fingers from the turmeric. Chop the basil and set aside.
Peel the garlic and set aside. Add one cup of rinsed quinoa to a saucepan with one cup of water and one cup of coconut milk. Turn stove on high and bring to a boil. Add the ginger, turmeric, garlic and apple cider vinegar. Reduce heat to low and cover with lid. Chop the cauliflower and add to fry pan to sauté.
Sprinkle with salt and pepper. Cook on medium heat with lid. Once the cauliflower is fork tender, remove the lid and raise the heat. This will allow the cauliflower to caramelize. Remove from heat once the cauliflower is slightly brown. Check the quinoa and stir to avoid any sticking. The quinoa is cooked once all the liquid is absorbed. Add salt and pepper to taste. Then add the fresh chopped basil and olive oil and stir. Combine the cauliflower and quinoa for a truly satisfying meal!
